The story of the Coconut In Sri Lanka

                                               

Coconuts have been harvested on the Island for thousands of years and up until recently just like the famous Ceylon Tea, Sri Lanka was the largest coconut producer in the world, Sri Lankan coconut oil, coconut water are un-matched in quality to other palms in the world, the most notable reason is since the locals has been perfecting coconuts on the island for thousands of years, different varieties of the tree have been perfected for different reasons.

Thambili as known in the local dialect Sinhalese is best grown for drinking, it is distinctive orange colour sets it apart from other coconuts. This variety of coconut is sweeter & high in electrolytes high in nutrients. In its young age it tends to have more coconut water and less coconut meat. It is best known in Englisg as the King of coconuts.

The green coconut or POL as known in the local dialect is what is used for cooking. The meat of the coconut is used to make sambol and coconut milk for currys and so on. It is also the variety used for coconut oil and coconut sap tapping.

It is  this variety of green coconut that we at cocora use to tap toddy, or collect sap from. The main ingredient of vegan coconut aminos.

Colmans Ceylon Organic coconut aminos is one of the pioneers to esablish the product in commerical scale in the early 2010's in the world. Our manufacturing facility at panadura is a heritage business established in 1896 as a coconut vinegar manufacturer C. D. de Fonseka & Sons.

South Asia and Sri Lanka in particular are inventer pioneers in toddy tapping as it is called here or organic coconut sap collection. This involved the careful collection of the coconut nectar from the coconut palm flower, which bloom high up the coconut tree. This is all done by hand and is collected carefully into specially made pots which are immediately sent for processing. Which in ancient times were turned into to vinegar and treacle, hard sugar and even consumed in its purest form as mild alcoholic beverage. This mild alcoholic beverage contains 7% of alcohol and is rich with vitamins and minerals.

It is high in natural sea minerals. 

It is the coconut flower that gives the coconut sap. It is what is important in the manufacture of aminos.

Colman's ceylon sources all its ingredients for organic coconut aminos from the natural rain forests and coconut groves of sri lanka. Non of it is genetically modified or bud. some SE Asian countries have bud coconut trees, where the yield of coconut sap is low.  Furthermore Sri Lankan government has banned all forms of genetically modified farming so Genetically modified ingredients are non existence in the local market.

How to use Aminos?

Make it your own Aminos, think Ginger and garlic. chives and chili. Coriander/lemongrass. make it your own with what you love, the original aminos will lock on to the new additions well.

It is great as a dip on its own or with a few spices chopped in as a Vinaigrette. Since amino has a slightly sweet tone to it adding a few chopped onions with some garlic or some coriander with some chilies will give a much richer dipping for the sushi or the patty. add a little ginger and it will be fantastic.

Great as a salad dressing you can pour it directly over a Thai salad, an Italian salad with coconut oil and coconut aminos.  Rather than using heavy creams on salads, for those who want the most out of you garden salad this is a best way to compliemnt your vegan diet

BBQ's with coconut aminos are perfect, use it over pork or in my chicken, best used before as part of  bbq sauce for marinating and then lightly brush it while in the grill and add little ketchup. The organic teriyaki flavor amino is best for that.
